Growing Regions: Brown sugar is made from sugars that retain a small to large amounts of the molasses from the partially evaporated sugar cane juice). Cane sugar is produced from sugarcane, a plant native to the warm tropical regions of South Asia. Sugarcane is most commonly grown in Brazil, India, China and Thailand. Other notable countries include Mexico, Colombia and The Philippines. 

Variations: 

Uses: Brown sugar caramelises much more readily than refined sugars therefore it is used to make glazes or gravies brown while cooking. Brown sugar also has a slightly less caloric value by mass compared to white sugar

Growing RegionsInvert sugar is made from a mixture of glucose and fructose. In comparison to sucrose, invert sugar is sweeter and less prone to crystallisation.

Uses: Invert sugar is used in jams, honey, golden syrup and fondant. Invert sugar is known also to have more powerful preserving properties than normal sugar.
